HALLOUMI MAKING IN ALL STEPS

   The oldest written reference to Halloumi as “caloumi” is found   in a codex containing five manuscripts on the history of Cyprus and is kept in the library of the Correr Municipal Museum in Venice, (Biblioteca Civico Museo Correr di Venezia) in the codex Codici ms Dona dale Rose, n 45, f 103r.
